Meatloaf

Ingredients

  • 600g minced beef
  • 20g grated parmesan cheese
  • 1 egg
  • 30g breadcrumbs
  • 60ml milk
  • 4 cloves of garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • for the rub:
  • 10gr sea salt
  • 20gr dark brown soft sugar
  • 5gr paprika powder
  • ½ tsp freshly ground pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/3 tsp cayenne pepper
  • remaining:
  • 20 slices of smoked bacon
  • 50ml barbecue sauce
  • 25ml honey

Preparation

  1. In a bowl, mix the minced meat with all the ingredients. Knead well and roll this into a large meatloaf, in an oblong shape.
  2. Roll the meatloaf through the bbq rub. Wrap the meatloaf with slices of bacon. Do this by laying two slices of bacon next to each other on your work tray, with ends overlapping a little. And put a slice underneath each one to create a kind of mat. Lay the meatloaf on top in the middle and fold slice by slice around the meatloaf. Then wrap the meatloaf in aluminium foil.
  3. Heat the E Braai to 120 degrees. Cook the meatloaf on the barbecue for 60 minutes, with the lid closed.
  4. Meanwhile, heat 100 ml of barbecue sauce in a pan and stir in 50 ml of honey. Then turn off the heat
  5. After an hour, remove the aluminium foil from the meatloaf and heat the E Braai to 180 to 200 degrees.
  6. Brush the meatloaf with the barbecue sauce and grill it all around on the barbecue.
  7. After this, slice the meatloaf and serve immediately.
